I love juicy, homegrown tomatoes. Normally I don't care for potato or pasta salad any other time, but when the grill is heating and my family is breaking out the paper plates, baked beans, etc., then I start looking for "the perfect" tater or pasta salad to make or taste.
As for what goes ON the grill, there's really no one favorite. My husband and I experimented with pizza on the grill two summers ago - using those personal size Boboli crusts, or similar flatbreads as bases, and then adding sliced grilled chicken, veggies or the like. My favorite was actually grilled onion and grilled corn. When you're done grilling the corn, slice it off the cob with a sharp knife, toss it and the onion with a little bit of pesto and some shredded or finely cubed provolone - it just takes a couple of minutes and just the kiss of smoke from the grill makes it special.
The next summer, we experimented with different rubs and sauces for thick cut pork chops.
This year I want to experiement with grilled veggies - jalapeno poppers, eggplant, grilled tomatoes, and a neat skewered cheese and veggie skewer we watched Steve Raichlen do on his PBS show to start with.
And, in a recent catalog we saw a special tool for the grill allowing one to cook meatballs on the grill - it makes about 12 at a time. Given my husband's and my brother's LOVE of meatball sandwiches (with cheese and tomato sauce of course), we may have to experiement with some new equipment this year.
Glad this weekend is the Fourth of July - time to plan the menu!
